Zucchini Bread

This recipe, too, from my mother-in-law. The Healthy Baked Oatmeal will have to wait, because we've been eating this Zucchini Bread for breakfast so far this week.

Ingredients:

3 eggs
1 c. cooking oil
1 and 1/2 c. sugar
2 tsp. cinnamon
1/2 c. chopped nuts
2 c. peeled, grated zucchini
1/4 tsp. baking powder
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. soda

Beat eggs until light and foamy; add oil, sugar, zucchini, and vanilla. Add flour, salt, soda, cinnamon, and baking powder. Mix until blended. Add nuts. Divide in 2 greased loaf pans. Bake 1 hour at 325 degrees.
