Spinach Egg Casserole

The Pioneer Woman is holding a dairy recipe contest! I love her contests. They are easy to enter, fun, and have amazing prizes. Here's my entry...

My mom made this recipe for my little sister's graduation brunch, and cut it in bite-sized squares. I've since made it for a breakfast meeting and had several friends request the recipe. My favorite part about this dish is that it is very cheesy! If you love cheese and spinach as much as I do, I think you'll enjoy it, too!

6 well beaten eggs
1 large carton of small curd cottage cheese
1 box of frozen chopped spinach, cooked and drained
12 oz. grated mild cheddar cheese
1/2 cup melted butter
6 T. flour

Mix together and pour into a greased 9 x 13 Pyrex dish.

Bake @350 degrees for 45 minutes to an hour to set.

Optional: green salsa or green chilies for taste
