Garden-fresh Homemade Salsa!
Zucchini and Tomatoes (We will be freezing most of them.)
Zucchini Bars with Cream Cheese Frosting (These taste like banana cake to me - amazing!)
Zucchini Bread
My mother-in-law could host a cooking blog of her own - she has an incredible stash of recipes. I will have to share with you the ones for the salsa, zucchini bars, and bread this week.

Wow - you scored on the fresh veggies. How do you freeze tomatoes and zucchini? I puree both, but never thought to just dice and freeze that way. I'm curious what works for you. (not "stealing" ideas...just "borrowing"...!)
Lucky you. Thanks to a month of rain nothing survived this year. I will miss canned tomatoes and salsa.

Katie,
I've never frozen either of them before, so it will be an experiment! :)
I was told you can shred the zucchini and freeze to use later in baked goods, I don't know about eating it like a veggie... might get soggy.
My sister-in-law dices the tomatoes and freezes them. If you don't peel them (like the peaches), the skins come off when you cook. I think I am going to attempt freezing them whole! I'm going to post about it tomorrow... I need to get going on them - they are ripe!
I am excited to get the zuchinni car recipe. Looks good! I always shred and freeze zuchinni, and it works just fine!
