Here are some tomatoes and zucchini from my husband's parents' garden that we will be incorporating into our menu this week. Delish!
Last night, I pureed some of the fresh tomatoes and spread them on the pizza instead of sauce. The fresh "sauce" seemed kind of runny and funky before I cooked the pizza, but once it was cooked, it I liked it.
We will also be putting tomatoes on our tuna salad sandwiches, making Baked Zucchini & Tomatoes with Cheese, and maybe even putting fresh tomatoes into our Vegetable-Beef Soup.
