Crock-Pot Breakfast Strata


The theme is crock-pot recipes. Not just any old stew or roast that everyone knows you can throw in the crock-pot, but crock-pot specific recipes. Introducing the Crock-Pot Breakfast Strata - great for Christmas morning! (Or anytime you have guests.)

Load up the crock-pot the night before and wake up to an easy breakfast.

12 eggs
1 c. milk
1/2 t. dry mustard
salt and pepper
1 lb. bacon, cut into small pieces, cooked and drained
1 (32 oz.) bag frozen hash brown potatoes
1/2 c. onions, diced
3/4 lb. shredded cheddar cheese

Layer the ingredients in you crock-pot in this order:

1/2 of the potatoes, on the bottom
1/2 of the bacon
1/2 of the onions
1/2 of the cheese
potatoes
bacon
onions
cheese

Beat the eggs, milk, mustard, salt and pepper together. Pour this over the whole mixture. Cooke on low for 10 to 12 hours. Be careful to not let it burn. 10 servings.

loving this idea! Especially because it's done when you wake up, you don't have to pre-heat the oven for 15 minutes then wait an hour for a casserole to cook. I'm saving this in my new recipe idea binder for sure...

Oh I so have to try this. It sounds a lot like a dutch oven recipe Tom, Jason's dad makes. To think it can cook overnight and be ready for breakfast - wonderful!
