Menu Plan 6/16/08


Sorry this is SO late! We've been out of town at the lake for a long weekend and so now I am trying to get caught up!

Breakfasts:
Granola w/ milk

Lunches:
PB&J sandwiches w/ homemade jelly
Chicken Salad Sandwiches *recipe below*
carrot sticks
cottage cheese
fruit
dessert

Dinners:
M-camping
T-Chinese Chicken Salad *recipe below*
W-leftovers
Th-chicken and green bean stir fry (company)
S-leftovers

Desserts:
creamsicles

Chicken Salad for Sandwiches

Here's what I've decided I like the best in my chicken salad. More items would be good, but these are my essentials:

chicken, cooked and cubed or shredded
red or green grapes, halved
almonds, chopped or sliced and toasted (under the broiler)
Miracle whip

Mix together and serve on bread. Yum.


Chinese Chicken Salad

Ok , this is not a Chinese salad. I just like to call it that. It is similar to an Asian flair salad from a restaurant.

Salad mix or coleslaw mix
almonds, chopped or sliced and toasted (under the broiler)
1 pkg. chicken flavored ramen noodles...Yes, MSG :(
mandarin oranges, drained
grilled chicken, sliced or julienned

Dressing

1/2 c. oil
1/3 c. vinegar
1 T. sugar
chicken ramen noodle seasoning packet
1/8 t. black pepper

Assemble salad immediately before serving. The almonds, the dry ramen noodles (crushed and broken), the oranges, and the chicken go on top of the lettuce or coleslaw. Shake and pour dressing over everything. I love this salad; it is my favorite! Enjoy!

Umm, sounds yummy. I will have to give the Chinese chicken salad recipe a try. I think we must have very similar tastes!! :) I am making chicken salad tonight--can hardly wait!! :)
