Healthier Spice Cake

I made a spice cake this weekend, and it was almost demolished in 2 days (by 2 people). I didn't want to use up my eggs, so this is what I did... I followed this recipe for chocolate cake but with the following modifications.
  • No cocoa
  • Added 2 t. cinnamon
  • Added 1 t. nutmeg
  • Added 1/4 t. cloves
Other substitutions:
  • 2 cups whole wheat flour & 1 cup white flour (3 cups total as called for)
  • measured 3/4 cup oil (as called for), removed 1 T. of the oil and replaced it with 3 T. ground flax seed. This was the suggested substitution on the flax seed box (1 T. oil = 3 T. flax seed).
Here is the recipe for the spice icing.

4 T. butter
1 lb. (2 cups) confectioner's sugar
1/2 t. cinnamon
1/2 t. nutmeg
1/4 cup milk

I also added some vanilla.

Cream butter and sugar. Mix in spices. Add milk and beat until frosting is smooth.

This is by no means a completely healthy cake. If so, it wouldn't be cake would it? It has just as much sugar as it does without the substitutions. But it does taste healthier with the whole wheat flour and flax, and we liked it!
