I am excited about our menu this week. I will be trying new recipes with the key lime pie and chicken enchiladas. Plus, I am planning for a party - that menu to come later!Breakfasts:
Granola w/ Milk (I know, we have it all the time. My husband keeps requesting it.)
Lunches:
PB&J
Egg Salad Sandwiches
Carrot Sticks
Yogurt
Fruit
Dessert
Dinners:
M - Grilling with friends. We will take Pasta Salad.
T - BBQ Meatballs, Corn
W - Chicken Enchiladas*, Green Salad, Corn Bread
Th - Leftovers
F - Grilling with friends. We will take a side dish. Any good (easy, cheap, healthy, kid-friendly) ideas??? Please help! Or I might just end up taking veggies and dip... which would be okay, too.
S - Our daughter's first birthday party! Menu posted afterwards. I don't want to spoil it for our guests. Ha! It will be simple (of course), but hopefully very yummy, too!
S - Leftovers
Dessert:
*I've been inspired by this simple Chicken Enchiladas recipe and this healthy Chicken Enchiladas recipe. I think I'll use some of those ideas and see what happens! :)

I always see where people make their own granola, so I'm glad to see a recipe posted. I think I'm going to give it a try. When you say a large cake pan, you mean a 9 x 13 size? And can I leave out the raisins? Because that qualifies as food in my food, even though the coconut wouldn't. :)Thanks.

Yummo! EVerything looks good. You know an easy side dish that is yummy is macaroni salad. I think I saw a recipe on www.marthastewart.com/everyday. You could do a search. Kids love macaroni even if disguised as a salad lol.

Kayren, on the granola, you could use a 9x13 or a jelly roll pan. I usually use a glass 9x13... and I do leave out the raisins, too! :)
