Right now, I use extra virgin olive oil and canola oil in my cooking.
After hearing tidbits about the benefits of coconut oil and expecially after reading The World of Oils by Lindsay, I am rethinking that.
I would like to do some more research. I will stick with the extra virgin olive oil, but I am thinking that I would like to try to get away from canola oil because it is genetically modified - which I didn't know! But there are so many studies, statements, and opinions out there, it is hard to know what to believe on GMO's. It is almost like you have to just pick a side and go with it.
Bottom line, if using coconut oil is a simple as using canola oil, and coconut oil is the more natural option, I prefer to use coconut oil.
Now, I just have to go find some that I can afford.
