Th-Zucchini and Rice Pizza Casserole (see recipe below)

Desserts:
no-bake cherry cheesecake (not from scratch, but a treat!), brownies
*I might add some chicken since I only have one can of black beans and my husband likes meat.
Zucchini and Rice Pizza Casserole
1 1/2 c. cooked rice
2 sm. zucchini, sliced and steamed
4 oz. mushrooms, sliced
6-8 oz. mozzerella cheese, shredded
1/4 c. parmesan cheese
10-12 oz. spaghetti sauce
1/2 lb. ground beef or turkey, browned w/ 1/3 c. diced onion & 1/2 tsp. salt & drained (optional)
In a 1 1/2 quart casserole dish, make layers as follows from bottom to top: 2-3 T. sauce, meat mixture if desired, rice, mozzerella cheese, and zucchini. Cover with remaining sauce. Sprinkle with parmesan cheese and bake, covered, at 350 for 30-45 minutes, until hot. Makes 5-6 servings.

I love black beans and cous cous, but I would never have thought to put them together. I'll have to give the recipe a go.
