Spinach Veggie Wraps

This week's Make-It-Yourself-Monday idea this week is to copy-cat a favorite restaurant meal. I did this before with the recipe below. It is not fancy, but I think it is pretty tasty.

Spinach Veggie Wraps – from Jason’s Deli

This is the only vegetarian item from a restaurant that I actually prefer over non-vegetarian items. (I am not a vegetarian.) I order it every time. It is not expensive at the restaurant, but here is the recipe in case you want to make it yourself – like I did when I was pregnant and wanted this instead of my usual pb&j everyday for lunch.

Spinach (whatever style you prefer)
Mushroom slices
Fresh avocado slices (or guacamole)
Pico de gallo
Sprouts
Monterey jack or asiago cheese
Spinach tortilla wrap

I leave out the sprouts just because I never have them handy. Wrap the ingredients in the tortilla and heat through so cheese is melted. Serve with salsa.

At Jason’s Deli they also serve it with a side of fresh fruit w/dip. A yummy, light and healthy lunch!

I am guessing that it would be an approximate 50 cents for each ingredient per serving (give or take some) plus $1 for fruit (which would give you more fruit than the restaurant serves). That's is $4 for the meal, which equals savings of at least 1/3 off the restaurant price of $5.99.

That is kind of expensive for a lunch for me, but it is chock full of nutrient dense ingredients. Plus, you could make it for even less if you shop wisely. It would also probably be good with leftover chicken or turkey added for more protein.
