I loved this! My husband thought it was just ordinary. Alterations I made: used some cooked corn, no carrot, ground turkey, and whole wheat tortillas. The rest of the ingredients were the same as in the recipe. We liked it served with sour cream. The tortillas got soft, like noodles, so in that way it was like lasagna. It was not spicy, but had a Mexican flair because of the ingredients. My nearly 11 month old liked it, too! I will be making it again. (FYI – 2 adults ate ½ the pan for dinner. Our only side dish was cooked carrots, though.)
