
Last night I made some Vanilla Scented Granola. It's my new favorite granola.
I reduced the white sugar from 2 T. to 1 T. Also, in an attempt to make it more frugal, I left out the 1 cup of almonds and added 1 more cup of oats in its place.
However, my challenge was replacing the brown sugar. Not in an attempt to make the recipe healthier or cheaper, but simply because I am out of brown sugar this week...
So I did what I always do, and googled it.
I learned that you can make your own brown sugar by mixing 1 and 1/2 T. molasses with 1 cup white sugar to equal 1 cup of light brown sugar.
Surprisingly, I found molasses in cupboard. I put the molasses in with the other liquid ingredients, and put the white sugar in with they dry ingredients like usual. It seemed to work just fine.
Well, now I know I can continue to do some baking with brown sugar this week, even if I don't make it to the grocery store before the weekend. Now if only I had a substitution for the chocolate chips I've already eaten...
(Another brown sugar substitute I tried was white sugar mixed with maple flavoring. It worked well on the Pumpkin Streusel Muffins. --I had maple flavoring leftover from making P.W.'s Cinnamon Rolls last winter.)
