Simple Roasted Chicken and Stock


Today I am roasting a whole chicken in the crockpot. I'm also throwing in a bag of frozen stew vegetables from the supermarket.

Tonight I plan to use my crock-pot some more by making chicken stock from the carcass. This will be the first time I have attempted using the crock-pot to do this. We will use the stock next week for a chicken pot pie or chicken noodle soup.

This should end up being pretty thrifty and green. I am trying to make the most of the chicken (79 cents/lb. at Aldi) and utilize my crock-pot (which I am guessing uses less energy than the conventional oven.)

Now, if someone can tell me what to do with the giblets that came inside the chicken...

I am a vegetarian, so I don't know why I'm answering your question. . . . But can't you use the giblets for your stock, too? Or feed them to animals? Or chop them up and put them in a casserole with rice and cream of chicken soup? Just kidding about that last one, though I'm sure it's been done.

Perfect timing AGAIN! I'm (literally) going to the store after naptime today to take advantage of the whole chicken deal my grocery store has this week.

Could you post (or email me) any tips you find while experimenting with this process? I'd love to learn from your mistakes instead of my own! :) I'm hoping to have time to crock the chickens (one each day) over the next few days.
