
A note regarding last week's menu: we really liked the chili recipe! I wanted to try it because I liked that it used a homemade seasoning mixture (no MSG). My husband approved! It was a little too spicy for my daughter, but she did eat some. Next time, I'll remember to remove some for her before adding all the spices.
Breakfasts:

Oatmeal with Fruit, Milk (daughter)

PB&J Sandwiches
Cottage Cheese/Yogurt

Dinners:
Monday - leftover burritos
Tuesday - Crockpot BBQ Chicken on Buns, Green Beans, Homemade Applesauce*
Wednesday - leftovers
Thursday - Pineapple & BBQ Chicken Pizza (I am going to try Amy's Favorite Pizza Dough.)
Friday - out to eat
Saturday - In-laws' anniversary dinner**
Sunday - undecided
* For homemade applesauce, I just peel, core, and slice the apples, spray them with lime (or lemon) juice and put them in the crock-pot with a little water. I cook them on low for a few hours until soft. Then I use my Braun handblender and puree them. I let the applesauce cool, put it in the fridge, and we eat it in less than a week! (I've also frozen some before.) You can also sprinkle cinnamon on the apples while cooking, or add a little sugar if desired.
**I will be making Black Bean & Corn Salsa to snack on throughout the weekend with tortilla chips. For dinner we are having steaks, salad, baked potatoes, Red-Hot Applesauce Jello, garlic bread, and dessert.
