
Menu Planning has become one of my favorite posts of the week! I used to think that assigning a meal to a certain day was boring. But now that I've been doing it awhile, I really like it. It works out well with my husband's work schedule and eases my stress during the week. It's a beautiful thing.
Breakfasts:
Granola w/ Milk*
Orange Juice
Lunches:
PB&J
Yogurt
Chips
Carrots
Fruit
Dinners:
M - Stir Fry
T - Leftovers
Th - Leftovers
F - Chili Cornbread Salad (great summertime meal!)
S - Leftovers

Chocolate Cake and Vanilla Ice Cream
*I made some granola last night and used peanut butter instead of the oil. We recently tried the Costco store brand (Kirkland) of organic peanut butter and like it. We used to be strictly Jif fans. I had tried natual peanut butter before and was disapointed, but I think we will stick with this stuff for awhile. Maybe the trick is keeping it in the fridge? Anyways, the granola is good. It was a little thick to mix. I had to used my hands - the peanut butter isn't as runny as the oil. So the granola doesn't get as coated before baking and therefore isn't as crunchy.
