Zucchini
Tomatoes
Olive Oil
Garlic Powder
Italian Seasoning
Parmesan Cheese
Monterey Jack or Mozzerella Cheese, if desired
Drizzle a little bit of olive oil in the bottom of a glass baking dish (that's what I use, at least). Slice zucchini in half and then quarter lengthwise (so they look like pickle spears). Lay them skin side down in the baking dish. Top with tomato slices. Drizzle with a little bit more olive oil. Sprinkle generously with garlic powder, Italian seasoning, and parmesan cheese. Add monterey jack or mozzerella cheese. Bake @ 350 for 40 minutes.
Optional: Cooked bacon slices are a tasty addition on top of the tomatoes.
I could eat a whole pan of this alone for dinner! :)Ok, I am updating this to add: Do a dose of the garlic powder, Italian seasoning and parmesan cheese on top of the zucchini before adding the tomatoes. Then, do it like directed on top of the tomatoes, too.
