Ok, if you're like me, you've made multiple kinds of banana bread before. But when my neighbor Tina brought this to my daughter's b-day dinner, I asked her for the recipe. Instead of being heavy, dense, and somewhat crumbly (as my other banana breads have tended to be), this was spongy, moist, and light. I almost felt like I was eating cake. And it wasn't crumbly at all! I haven't made it for myself yet - gotta have some bananas first. But, I am looking forward to making it sometime soon, hopefully!
3 bananas (peeled)
½ cup butter (softened)
1 ½ cup sugar
2 eggs
1 tsp baking soda
1 tsp vinegar
1/3 cup milk
2 cups flour
2 Tbsp vanilla
In large bowl, mix together bananas until mushy. Add butter and sugar, then 2 eggs, beating well. In smaller mixing bowl, combine baking soda, vinegar, and milk. Mixture will be foamy. Alternately add flour and milk mixture (from smaller bowl) into large bowl and mix well. Add vanilla. Pour evenly into greased 9x13 pan and bake at 325 degrees for 40-45 minutes.

That sounds similar to my recipe. It is kind of "cakey." :) I usually add a bit of cinnamon, too. Yum! :)
