Mom's Lasagna


This week for Foody Friday, we are supposed to share our go-to meal, one we make often due to its ease and goodness. Well, lately, I have been trying quite a few new recipes lately, so you may have not seen this on the menu yet, but here it is now. Mom's Lasagna. The one I grew up with. It is a comfort food to me. Bonus: it is quick and easy. It is the first casserole I ever learned to make. I admit, I am kind of afraid to share it, because it is not a very pretty dish for company or anything. But my sisters and I all love it.

Disclaimer: If you are lasagna connoisseur, this is not for you. Don't say I didn't warn you.

You need:
  • 1 jar spaghetti sauce (Mom always used Ragu original.)
  • Lasagna noodles
  • Large carton cottage cheese
  • Shredded mozzarella cheese
  • Parmesan (optional)
  • Italian seasoning (optional)
Directions:

1. Boil and cool the lasagna noodles.
2. Spoon a little sauce into the bottom of a 9x13 glass baking dish.
3. Layer as many times as you wish (I usually do 3 or 4 layers):
  • Noodles
  • Cottage Cheese
  • Mozzarella
  • Spaghetti sauce
4. Sprinkle Parmesan cheese and Italian seasoning over the top.
5. Bake @ 350 until heated through and bubbly, 45 minutes to an hour.

This lasagna is really runny (soupy) and cheesy. That is what I like about it.

You could add meat or spinach if desired, of course. You can also use other types of noodles and it turns into a flexible baked pasta dish.

Writing this recipe out makes me hungry for some of my mom's lasagna. I have a some cottage cheese. Maybe it will show up on the menu next week.

There is just nothing like the recipes we grew up on... maybe I'll have to do THAT as a theme...
