Review

The Chicken Enchiladas were great. It made a huge batch - the 2 of us adults could probably get 4 meals out of them. I love having leftovers since I pack food for my husband a lot.

Pros:
large yield
no chopped onion
lots of real cheese (I don't like processed cheese)
basic ingredients

Cons:
probably high in fat with all the cream soup, cream cheese, sour cream, and shredded cheese

I cooked 3 large chicken breasts in the crockpot with a little water all day, shredded them, and used them for this dish. I had between almost 4 cups worth, not the whole 5 cups, and it was just fine. I also forgot to mix the sour cream in the sauce before I poured the sauce on the enchiladas. So I heated the sour cream and poured it on over the sauce right before I added the cheese for the last 5 minutes.

This was tasty! I will be making it again! Thanks, Mandy!
