The BBQ meatballs sound delicious!
I do a very similar soup in the crockpot. I brown up the beef (I use the cheapest roast cut i can find and cube it up), toss it in with almost the exact same ingredients and cook all day. At the end I use melted butter for my roux and mix it with the flour, pour it in the crockpot and let it cook, stirring a bit until it thickens. It doesn't get as thick as on the stovetop because it doesn't come to a boil, but it's still pretty tasty =)
I haven't made it in a while; your menu makes me want to pull out the crock and whip up a batch!
