Menu Plan 2/22/10



Breakfasts:
Soaked Oatmeal
Milk
Applesauce Muffins

Lunches:
PB&J or Tuna Sandwiches
Snack??*
Fruit

Dinners:
Monday - Leftovers
Tuesday - BBQ Chicken & Green Pepper Pizza (PW's crust)
Wednesday - Leftovers
Thursday - Homemade Macaroni & Cheese (with squash puree), Broccoli
Friday - Leftovers
Saturday - Black Bean & Rice Burritoes
Sunday - Hearty Chicken & Rice Soup

*I am at a loss for what to go with our lunch...  this is where we usually have a snack or treat item, but I need something healthy, no dessert-type item...maybe I should just buy some cheese??  Ah, I could make some vegetable soup in the crockpot.  Tomato juice, stock, frozen veggies and potatoes, and some seasonings.  Easy and cheap...

The cupboard is getting bare... I will need to shop at the end of the week in preparation for March!

I find that cinnamon adds a sweet taste to alot of things. I don't know if you have it in the house but for some healthy desserts I like to sprinkle cinnamon in natural applesauce. My daughter and I like boiled apples with cinnamon sprinkled in it. Any fruit boiled a bit often has a sweeter taste. Adding cinnamon to some muffin recipes also makes it taste more dessert like.

I am trying to do a Meatless March theme for recipes. I know that you do Burritos sometimes. Do you have a link to a recipe? I have never made a burrito and that would be a great option.

Oh, good idea. Homemade applesauce is great! I should make some for baby food AND for us... thanks for mentioning it.

Unfortunately, I don't have a burrito recipe. When I make them meatless I usually do some beans, cooked rice, taco seasoning, and salsa all mixed together and then topped with cheese before rolling them up. Then I bake them again and top with sour cream and whatever you want before eating.

Here is a recipe for vegetable enchiladas that caught my eye because a friend recommended it. I haven't tried it yet, though:
