Menu Plan 4/25/11

Breakfasts:
Sausage (w/onion and cayenne) & Sweet Potato Hash
Fried Eggs
Fruit
Milk

Lunches:
Egg Salad over Lettuce x2
Sherried Tomato Soup with Chicken
Fruit

Snacks:
Crispy Almonds & Walnuts with Raisins
Celery & Almond Butter

Dinners:
Monday - Cabbage Leaf Chicken Tacos
Tuesday - Homemade Salmon Burgers, Peas
Wednesday - Beanless Chili, Green Beans
Thursday - Leftovers
Friday - Leftovers

Weekend:
Eating with family to celebrate my little sister's graduation!  Making gluten-free cake pops! (experimenting with gf cake mix)

Sunday Brunch:
Breakfast Casserole (w/ bacon, spinach, and cheese)
Sweet Potato Homefries
Fruit Salad

Hope you enjoy the GF pcake pops. I've made them with Betty Crocker GF mixes before and they are great. When made as a cake I find the mixes to be a little dry (remedy by adding pudding mix and a little extra liquid and it's fine) but I don't have to adjust anything to make cake pops and have them taste great. In fact, no one knew they were GF til I ate one!

I really want to try the pancakes but I wonder how they would work with soy nut butter. We have a peanut allergy in our family and that is our butter we have on hand.
