HFCS & Other Thoughts

Last night my husband asked me why we are working on limiting our intake of high fructose corn syrup if is is "all natural". I read him parts of this article and this article. He said "Oh."

I really liked the chili I made last night. My daugther even ate it. However, after changing her diapers today, I don't think I will give her any more tonight. :)

The chili recipe (with taco seasoning) makes a large batch, so we are eating it for two meals, and have enough to freeze for a third meal. That 1 pound of ground turkey sure goes a long way! It helps to use a variety of beans. I used kidney, black, and pinto. I cooked dry beans successfully for the first time! I was going to use the crockpot method, but forgot to put them in in time, so I resorted to reading the instructions on the bag (I bought them at Aldi). I did a quick soak (boil for 2 minutes, remove from heat and soak for 1 hour) and then simmer for 1 hour to cook. I froze in 2 cup portions the ones we didn't use in the chili.

However, I have yet to find the time to soak any grains. I had never even heard of that until I started reading blogs. Lindsay's recipe for cornbread (with the chili recipe) looks delicious... but I must let you know our cornbread mix came from a box. However, after reading the ingredients and seeing that it contains partially hydrogenated lard - ew! - I might try something else next time.

I am SO glad you posted the link to the crock pot beans!!! I lost my tiny piece of paper with the dry-to-soaked beans conversion and I couldn't find anything consistent online. I just taped the piece of paper into the inside of my cabinet, so I won't lose it again. No more dumping and guesstimating for me!
